Recipe alert: ACC Truffle Goat cheese Bitterballen GASP!

Did you know bitterballen are the Dutch most loved snack? It's like little meatballs, but we've put cheese inside, you're welcome!
Ingredients:
45 grams butter
65 grams flour
150 ml cold mushroom broth
200 grams ACC truffle goat cheese, grated
1 tbsp Salt
1 tbsp Pepper
3 tbsp flour
100 ml pasteurized egg whites (from a bottle)
100 grams breadcrumbs
Instructions:
Melt butter in a pan. Do not let it brown.Add the flour. Mix well and cook for 2-3 minutes over medium-high heat, while stirring the mixture through the pan with a rubber spatula.
Pour the cold broth - it must be really cold - all at once and stir until it forms a homogeneous mass.
Remove from heat. Let it stand for a minute.Then mix in the goat cheese. Cover the mixture (salpicon) and refrigerate overnight.
The next day, you can start rolling the bitterballs. Prepare three bowls: one with flour, one with egg whites, and one with breadcrumbs. Roll balls of the salpicon, each weighing about 18 grams. Coat each ball one by one with flour, ensuring it is fully covered. Then dip it in the egg whites and coat it with breadcrumbs. Repeat this step.
Fry the bitterballs at 170 degrees Celsius for 3 minutes.
